Pasta cooking tips

For perfect pasta every time, use these simple tips:

  • All pasta is not created equally. Good quality pasta leads to consistent cooking results and does not stick together. You can tell pasta is high quality if it made using Durum wheat. An indicator of this is the pasta's golden colour of which Diamond is a perfect example.
  • Use plenty of water.
  • Salt the water. Add a generous amount of salt to the water you are cooking your pasta in. Salt brings out the natural flavours in pasta. For best results, add salt once the water has come to the boil and make sure it is fully dissolved before adding your pasta.
  • Stir the pasta occasionally during cooking. This will prevent the pasta sticking to the bottom of your pan.
  • Do not rinse after cooking and draining. It is not a good idea to rinse your pasta after cooking unless you are using it for a pasta salad. Rinsing the pasta will strip its natural starches which help sauce to "stick". If you are making a pasta salad, remember to rinse your pasta under cold water to prevent overcooking.
  • Cook until Al Dente. If pasta is "Al Dente", it is soft on the outside but still slightly firm on the inside. "Al Dente" is Italian for "to the tooth" and indicates when your pasta is perfectly cooked. The best way to test this is simply to bite it!

Pasta storage tips

Here are some handy tips to help keep your pasta for longer:

  • Uncooked pasta. Store uncooked pasta in a cool, dry place. It will keep up to one year.
  • Cooked pasta. Store cooked pasta in an airtight container in the fridge. It will keep for 3 - 5 days. Remember that cooked pasta will keep absorbing flavours and oils so it is best to store separately from your sauce.
  • Freezing pasta. The best type of pasta for freezing is that used in baked dishes. You will have better results if you prepare the recipe and freeze it before baking. You can freeze these pasta dishes for up to two months, but one week is ideal for best results.
