Chicken Penne Alfredo

Serves:
4-6

Ingredients:

  • 1 packet diamond penne pasta
  • Chicken breast or thighs
  • 1 cup Frozen Veggies (spinach, corn)
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1 1/2 cup full fat milk
  • 2 cup cheese
  • 1 PKT instant cheese sauce mix (three cheese etc)

Directions

Microwave pasta in water for 20 mins until cooked and cover the bottom of a non-stick dish (if you use non-stick you get crunchy pasta edges, yum). Cut chicken into pieces and fry until brown and put on top of pasta. Put frozen veges on top (My family loves spinach) Put butter and flour into hot bowl used in microwave to cook pasta and stir. Add milk and lots of cheese, stir and microwave for 5 minutes Add 1 pkt of instant cheese sauce and microwave for three more minutes. (Instant cheese sauce stops the sauce from splitting and adds a herby twist). Pour the cheese on top. Grill until bubbly and brown. ***The best thing about this recipe is that the concentrations can vary as can the ingredients. Not enough chicken? throw in bacon. Use whatever veggies you like. BUT you do need the diamond penne as it holds the sauce and its shape in cooking.
