Here’s some delicious fresh veges in season now to enjoy with your Diamond pasta:




Leek
Cabbage
Pumpkin
Mushrooms
Spinach
Capsicum
Kumara
Carrots
Garlic
Cauliflower


Try making this delicious soup with all of these great autumn veges to warm your family’s appetites as the cool weather begins to set in. Chop 4 or 5 small carrots, half a pumpkin and 2 large kumara into similar sized pieces. Add to a large, oiled saucepan along with 2 sliced leeks, some crushed garlic, thyme, a couple of bay leaves and salt and pepper. Cook until the leeks are tender. Add 1 ½ litres of chicken stock and bring to the boil. Reduce heat to a simmer and cook for 30 minutes or until the vegetables are tender. Add 1 ½ cups of Diamond Seashells or Macaroni, 1 cup of shredded red cabbage and 1 cup of spinach. Boil for about 10 minutes or until the pasta is cooked. Serve with chopped Italian parsley, shaved parmesan cheese and crusty bread. Enjoy!
